You will need:
One cup of organic chickpeas (that were soaked in water over night)
1/3 cup tahini
1/2 cup of cold water
Juice of 2 fresh lemons
2 garlics cloves
Bunch of fresh italian parsley
salt and pepper
Cumin (1/2 teaspoon)
One spoon of olive oil
After soaking the chickpeas in water overnight, cook them until they are soft.
In a cuisinart blend the tahini, lemon, water, garlic and parsley.
Pulse until it is smooth then add the chickpeas and cumin and pulse again until it is the thickness you like.
To serve : Put it in a bowl, splash some olive oil and sprinkle with red pepper. You can also keep some of the cooked chickpeas aside and add them on top!
